Ingredients
- 3 cups cooked shredded chicken (a rotisserie chicken is perfect)
- 1/2 cup (120g) plain non-fat Greek yogurt
- 1 tbsp Dijon mustard
- 1 celery stalk, finely diced
- 2 tbsp red onion, finely diced
- 1/4 cup halved grapes or diced apple (optional, for sweetness)
- 1 tbsp chopped fresh dill or parsley
- Salt, pepper, and a squeeze of lemon to taste
Instructions

In a bowl, stir together the Greek yogurt, Dijon, lemon, salt, and pepper.

Add the shredded chicken, celery, red onion, grapes, and herbs.

Fold together until evenly coated. Taste and adjust seasoning.

Serve on greens, in a wrap, or with crackers. Keeps 3–4 days in the fridge.
